
Delphine Grossmann
This mixology enthusiast settled in Cannes for the new year 2025 with the exciting mission of managing and creating the new menu for the legendary Martinez Bar, whose new concept was launched in March 2025.
Her career path:
After graduating in 2007 from the Méderic Hotel School (Paris) with an additional qualification in bartending, Delphine gained her first professional experience at the Hôtel Fouquet’s Barrière Paris as a bar apprentice. After completing her training, she joined the Hôtel Le Bristol in Paris, then flew to Asia for two years in search of personal and professional enrichment before continuing her career in Switzerland, joining the Fairmont Montreux Palace as a barmaid. In 2019, she was promoted to Bar Manager at the Hôtel Royal Savoy in Lausanne. In 2021, she moved to Marrakech to join prestigious establishments, first La Mamounia as Bar Manager and then Le Comptoir Darna as Director of Operations for the beverage service.
For the Martinez Bar, Delphine Grossmann has devised a refined and creative cocktail menu, designed like a musical score where every note has its place. Her creations are presented in original settings that draw guests into stories inspired by music, cinema and the heritage of the Martinez. She mixes carefully selected spirits, balances them with bitters and combines aromatic herbal or fruity touches with homemade infusions and syrups, as close to nature as possible for a truly authentic taste experience. The cocktail menu is deliberately short and original, with creations that echo the 1930s style of the bar and revisited classics. Delphine’s passion for sharing inspires all her artistry and talent: encouraging encounters, inviting discovery, sharing her expertise and offering taste sensations. In the dazzling setting of the Martinez Bar, Delphine shines with her mixology skills and creates a warm atmosphere for wonderful evenings with family, friends and colleagues.
